Here is how you make Zucchini with Olive Oil and Herbs:

Heat the oven to 350 degrees F. Trim the zucchini and rub with a kitchen towel to remove any fuzz. Arrange in a heavy shallow baking dish large enough to hold them in a single layer. Pour over the olive oil and half of the lmon juice and add 1/2 cup water. Sprinkle with salt and pepper and bake uncovered for 10 minutes.Roll the zucchini around in the cooking liquid to coat, reduce the oven temperature to 300 degrees F, and bake 40 minutes longer, or until the zucchini are barely soft. Roll them around in the cooking liquid once or twice during baking, and add a few tablespoons of water if needed--there should always be at least 1/4 cup of liquid in the dish.Transfer the zucchini to a warm platter and sprinkle with a few tablespoons of the cooking liquid, the remaining lemon juice, the parsley, oregano, and olive oil, salt, and pepper to taste.
