Pour oz orange juice and 2 oz club soda over the vegetables (this is both flavoring and provides the "steam").* * ** * * * Add a double dash of lemon pepper and scatter a tablespoon of sliced almonds over the mix. 10 or so raisins added at this time are good --it's an option and depends on what squash you actually use.* * * * * **Mound the mix into a small pile, in the center of the pan and turn a serving bowl upside down over the whole -- this creates a mini steamer. You can flip the zucchini over once or twice to coat it if you like.* * * * *Let simmer 3-4 minutes (it's done when it's warm and tender). * * * * *Variations: Little yellow squashes work nicely too. (Any thinly sliced squash is nice). Consider using a dash of cinnamon for things like acorn squash. 5-10 raisins added in the mix is also nice. Just steam and eat. * * * * *Other juices can also be fun... consider substituting a tablespoon of "POG" (passion/orange/guava). Lemon juice is always nice as well. If you have a native foods gatherer around -- try substituting ground white acorn flour for almonds --- nice sweet aftertaste.
