4 oz Follow Your Heart Vegan Mozzarella
1/4 c 2% shredded mozzarella
1/4 c crushed raw cashews

Here is how you make FanciMcG's Almost Vegan Zucchini Lasagna:

Dredge zucchini slices in flour and saute in nonstick skillet sprayed with Pam. Set aside.Make the sauce:[I sometimes use homemade sauce, but when I don't have any on hand, I use jarred sauce and just kick it up by adding the other goodies listed.]In Dutch oven, saute onion, garlic, mushrooms and crushed red pepper flakes in a little water or vegetable broth (or Pam). When onion cooked, add spaghetti sauce and crumbles. Simmer on low for awhile.Mix the 'cheese' layer: In bowl, mix egg white with cottage cheese, drained tofu, garlic powder, and parsley. I often use my immersion blender to achieve a creamier consistency. Assemble: Spray 8" square baking dish with Pam. Layer:1. sauce2. zucchini3. cheese mixture4. sauce5. zucchini6. mozzarella (vegan first, then the 2%, b/c the vegan stuff doesn't melt so well)Cover and bake at 375 for 30 min.Uncover and sprinkle ground raw cashews on top and bake an additional 10 minutes.Serving Size:?9 servings from 8" square pan
