Pour 2 cups boiling water over couscous, let sit covered for 5 minutes or until all the water is absorbed. Add almonds, currants and spices - add a dash of red pepper, salt and black pepper. Mix thoroughly. Add olive oil (I use a fruity olive oil) and mix again.
