Bring quinoa to a boil in 1 1/2 cups of water and curry powder. Add dried cranberries. Allow to cool once quinoa has cooked and all water is boiled out. Sautee onios and zucchini and mix into the quinoa, finally adding the chopped apple, cucumber and sunflower seeds. Whisk together oil and vinegars and pour over cooled salad.
