1. Preheat oven to 375. Make several deep cuts in the eggplant. Sliver garlic cloves and place them inside the cuts. Bake eggplant until soft, about 40 minutes. Allow to cool.2. Once cooled, remove eggplant skin. Transfer the eggplant flesh and garlic to a food processor. Add the other ingredients and process until smooth.
