n a food processor, pulse the oats for about 10 seconds or until they resemble a course flour meal.Add remaining ingredients and blend well on high. I cut the bananas into large chunks before blending, but I don't think it would really matter. The batter will be smooth.Spray muffin tin with cooking spray or line with cupcake liners and fill. I used an ice cream scoop to get the right amount of mix into each tin.Bake at 350 for 18-20 minutes or until a toothpick inserted in the middle comes out clean.I also added a few pecans to the top of the muffins and smooshed them down into the mix before baking. I meant to add them before I put the mix in the tin, but just forgot so this was my fix.
