(1) 8oz package salt pork, sliced like bacon or cubed
(2) green onions, whites only
(2) stalks celery diced

Here is how you make Ham and Beans (with ham hock and salt pork):

Makes approximately (24) 1/2 cup servings.soak beans overnight, picking out the bad beans & debris as it surfaces. Drain rinse water after about 4 hours and refil.I cook mine in a crockpot for 12 hrs. However mom made hers on the stove (this is her recipe) and would let it cook all day (approx 6-8 hrs).take a 1 pound bag of pinto beans that have been soaked over night and put them into either a stew pot or crock pot. Add your diced onion & celery. Place salt pork in a skillet & fry til lightly browned. Pour into bean pot, grease & all. Place ham hocks in bean pot. Fill with water til ham hocks are covered. If using stove top, bring to a boil for about 30 min (skimming off any scum) and then lower heat to a simmer. Cover and let simmer for several hours, go back and check for scum, skim off. Repeat this every hour until beans are tender (6-8 hrs). If using crockpot, just put the lid on and forget them. I set my crock pot for 12 hours and let them cook overnight.
