Here is how you make Red beans and sausage:

Soak beans overnight, drain, wash, add back to pot and add 8 cups of water and 1 to 2 bay leaves as preferred. Cook at a low boil for 1.5 hours or until soft. In the meantime, cut sausage into desired size, I cut into small pieces, 1/4 inch, and saute in fry pan, add copied onion and cook until clear, add celery to mixture and cook another 15 minutes or until celery is at its desired softness. Add mixture to beans, salt and pepper and any other seasoning desired, and continue cooking at least another 15 minutes maximum another 30 minutes. Serve over rice if desired.
