2 lbs beef stew meet
1.5 lbs dutch potatoes halved or quartered to bite sized
1 lb carrots peeled and cut diagonally into 1 inch bite sized pieces
1.5 large yellow onions halved lengthwise and cut into 1 inch strips
8 oz sliced mushrooms
8 garlic cloves sliced
2 tablesspoons parsley
2 sprigs thyme
2 bay leaves
2 tablespoons flour
1.25 cups beef broth
1 tablespoon dijon mustard
3 teaspoons salt
2 teaspoons pepper
12 oz brown ale
.25 cup red wine

Here is how you make Slow Cooker Beef Stew with Muchrooms, Potatoes, Carrots, Beer:

Add 1.5 teaspoons oil to large skillet over medium-high heat. Swirl to coat bottom of pan. Add one-half stew meat and 1/2 tsp salt and 1/2 tsp pepper. Brown meat well for approximately 3 minutes. Remove meat from skillet onto plate. Repeat with other half of stew meat. Place stew meat, carrots, and potatoes in a bowl and toss. Add 1 tablespoon of olive oil to skillet. add garlic. Cook garlic moving constantly with a wooden spoon for 1.5 minutes. Add onions and cook for 4 minutes until slightly soft. Add mushrooms and cook for one more minute. Pour in brown ale. bring to a boil and cook for 2 minutes. Add one cup beef broth and 1 teaspoon salt and let simmer for 4 minutes. Pour contents of skillet into slow cooker. Pour bowl of stew meat, carrots, and potatoes on top. Add bay leaves and thyme. Cook on low for 7 hours. Whisk 2 tbsps of flour into remaining .25 cup of warm beef broth. Stir mixture, dijon mustard, and red wine into crock pot and cook for thirty more minutes on low.Remove thyme and bay leaves. Sprinkle with parsley and serve.
