I started making this soup with odds and ends from my vegetable bin and then added spices I knew were good for the memory. When I took a taste I was pleasantly surprised at the sweet and spicy direction it was going so I decided to make it into a bisque using lactose free milk so my son could enjoy it too! Serve with crusty bread or toasted sourdough.

2 tablespoons Coconut Oil
4 ribs of celery sliced
3 medium carrots diced
1 medium onion chopped
3 medium potatoes diced
1/2 bulb of garlic, chopped
1 tsp. Black Pepper
1 tbs. Turmeric
1 tsp. Curry Powder
1/2 tsp. Paprika
1 tsp. Cinnamon
1/2 tsp. Nutmeg
8 cups water
2 tsp. Chicken Bouillon Granules
1 tbs. Granulated Sugar
1/2 cup. Milk, 1% (I used lactose free)



How Do I Make Forget-Me-Not Bisque?

Here is how you make Forget-Me-Not Bisque:

I seriously added all my spices in a little at a time so I'm not quite sure how much I ended up using. You may want to start with 1/2 of what I suggest and then go from there to adjust the taste to your liking.Chop up all the vegetables, potatoes and garlic. Saute in melted Coconut oil and start adding the seasonings from the pepper to the nutmeg. Once the veggies have started to sweat, take a taste and adjust your seasonings. Add water and 1 teaspoon of the chicken bouillon granules. Reduce heat to simmer, cover and let the mixture cook for a couple of hours, peeking in every now and then to taste and adjust seasonings. If you think it needs more salt, use the bouillon granules for more flavor. Add the sugar during the last half hour of cooking. Remove from heat and ladle into a blender in batches to puree. Transfer batches to a heat proof bowl. Stir in milk and transfer back into pot. (I had probably a cup of broth and a few pieces of veggies left at the bottom of the pot that I didn't puree to give the soup a little texture.)Serving Size: Makes (8) 1-1/2 cup servingsNumber of Servings: 8Recipe submitted by SparkPeople user BMWMOM63.
