1. Mix oil, eggs, brown sugar, vanilla, coconut, water and yogurt. You can use any flavor of yogurt.
2. Add spices. The fiber soaks up a lot of spice; add more if you like. I add 1 tsp. Garam Masala (sort of like Allspice). You can also vary the vanilla extract with other flavors.
3. Chop the nuts and dried fruits and add. Total amount should be 1 to 1 1/2 cups nuts and fruit. The recipe can be varied by changing the types of nuts and fruits, so use your favorites. Raw, grated apple is also a good choice. I use raw cashews; there wasn't an option for that in the ingredient list.
4. Mix in the dry ingredients. The batter will be very thick.
5. Use a mini-muffin pan (24 muffins). Spray well with cooking spray. Don't be afraid to mound up the batter over the tops of the muffin wells.
