4 oz. large dice-mirepoix
1 oz. tomato paste
2 oz. dry red wine
14 oz. brown beef stock
1 bay leaf
1.5 oz. sherry
1/4 t. dried thyme

Here is how you make Braised Short Ribs:

1. Season ribs with salt and pepper. Heat pan with oil (med. high heat) and add ribs. Season on all sides.2. Add mirepoix and cook until golden brown. Add tomato paste and cook until it releases sweet aroma3. Add wine to deglaze. Reduce wine by half. Return ribs and cover with stock.4. Bring to gentle simmer over med-low hear. Cover and place in over (275 degrees) Bearse for 45 mins. Add leaf and thyme and degrease. Cook until fork tender-45 mins more.5. Transfer ribsand keep moist with cooking liquid.6.
