How Do I Make Gluten Free Pita Bread?

Here is how you make Gluten Free Pita Bread:

Dissolve yeast in 1/2 cup warm water. Add sugar and stir till dissolved. Let sit for 10-15 minutes until the water is frothy.Combine all dry ingredients in a large bowl. Using a heavy mixer with dough hook, mix in yeast mixture and egg on medium speed. Slowly add 1/2-1 cup warm water while mixing on medium speed for 2 minutes. Add just enough water so that the dough is soft and tacky, but not liquid.Coat large bowl with cooking spray and place dough in bowl. Turn once so that all the dough is coated. Allow to sit in a warm place for about 2-3 hours or until it has increased in size. Pre-heat oven to 500 degrees. Using bottom rack of oven, place baking sheet in oven as it pre-heats. Divide dough into 12 pieces and roll each out on a lightly floured board to 5-6 inches across and 1/4 inch thick. Place several circles on the pre-heated baking sheet and back for 4 minutes until bread puffs up. Turn over and then bake for an additional 2 minutes.Remove each from the baking sheet with a spatula and gently flatten each puff.
