Add broth, onions, diced carrots & diced celery. Cover & cook 6-8 hrs. On Low. 4. Make pesto by filling large saucepan with water & bring to a boil. Add 1 t salt. Blanch basil 20 sec. Remove with slotted spoon & transfer to ice water bath for 1 min. Strain basil & dry to remove all water. 5. Add basil, grated cheese, and pistachios to food processor. While running drizzle olive oil until a paste forms. Season with salt & pepper. Refrigerate, covered, until ready to use. 6. To finish the soup, stir in tomatoes, zucchini, pepper, & salt. Cover and cook for 1 hr. 8. Ladle soup into bowls and top with pesto and additional olive oil if desired.
