My friend started telling me about caponata when I was wondering what to do with the single small eggplant I was able to harvest from our garden this year. She didn't have a recipe, but gave me a list of ingedients. Tried to figure it out this afternoon and it turned out good. She suggested eating it with pita as a snack or appetizer. What Are The Ingredients For Caponata Recipe?The ingredients for Caponata are: i small eggplant, cubed (about 1.5 cups)2 stalks celery, diced 1 small onion, diced 1/2 bell pepper 1 large plum tomato, diced, seeds and juice included 1 clove minced garlic 1 Tbsp oregano 1 tsp Splenda 1/3 cup raisins 1-2 Tbsp capers, drained 1 Tbsp chopped black olives sprinkle of red wine vinegar, to taste salt and pepper, to taste How Do I Make Caponata?Here is how you make Caponata: Heat olive oil in large skillet over medium heat. Add celery and cook about 2 minutes. Add eggplant and half onion, cooking another 2-3 minutes. Add bell pepper and cook 5 more minutes. Add rest of onion and garlic and cook until translucent. Add tomato,raisins, Splenda, and oregano. Simmer for about 20 minutes so flavors have a chance to blend. Add capers and olive and heat through. Stir in salt, pepper, and red wine vinegar. Remove from heat. May be eaten warm or cold.
