Prepare the curd strainer.Place a double layer of cheesecloth in a colander so that it overlaps the sides when pressed down in the middle. This ensures the cheesecloth will not fall down the sides when you strain the mixture.Mix the milk and herbs over low heat.Mix any desired herbs or garlic into the the milk in a saucepan. Gently stir while heating to 190F (88C).Remove from heat.When the milk reaches temperature, turn off the burner.Add the vinegar.Add the vinegar to the mixture and gently stir for 5-10 seconds. The curds (light chunks) and whey (yellowish liquid) will begin to separate. Allow to stand for 1 minute.Strain the cheese curds.Pour the separated curds and whey through the cheesecloth and colander to reserve the cheese curds. Sprinkle the curds with salt, then gather the cheesecloth around the cheese to form a ball. Press lightly to remove any excess moisture.Refrigerate and Serve.You may press your cheese into a mold if desired, or place the cheesecloth and balled cheese on a cup or bowl to drain while refrigerating. Place in the refrigerator for at least 1 hour prior to serving.
