What Are The Ingredients For Low-Fat White Chicken Chili Recipe?The ingredients for Low-Fat White Chicken Chili are: 2 tbsp extra virgin olive oil1 finely chopped medium onion 6 garlic cloves finely minced or pressed 3 bay leaves 2 cups chopped green chilis (canned) 1 tbsp Salt 2 tbsp Black pepper 1 tbsp Cayenne Pepper 10 boneless skinless chicken breasts cooked thoroughly and chopped 3 cups (48 oz.) low sodium chicken stock (can use broth, but not as good) 4 cups (or 3 cans) cooked cannelini beans (white pinto beans) 6 tbsp ground cumin (or more to taste) 1 tbsp chili powder 1 can sweet corn, drained 1/2 cup low fat sour cream 5 tbsp Fresh Cilantro How Do I Make Low-Fat White Chicken Chili?Here is how you make Low-Fat White Chicken Chili: Bring a large pot up to medium heat. Add olive oil, then onion, salt, black pepper, and bay leaves. Saute for a few minutes while you chop the garlic. Add garlic and saute for a few minutes, stirring occasionally, making sure the onion and garlic do not brown. Add green chilis, cumin, cayenne pepper, and chili powder. Once mixture is combined, add the chicken, corn, and sour cream and stir to combine. Next, add the beans (undrained) and gently fold together. Add all of the chicken stock and bring up to a simmer, not a boil. Cover and let simmer for 2 to 4 hours over low heat, stirring once every 30 minutes if possible. About twenty minutes before serving, add the five tbsp of chopped fresh cilantro (or less or more depending on how much you like cilantro), and stir. All spices can be modified to your taste.This recipe makes a lot, so if you're feeding only a few, you can easily half this recipe. Or, you can make the full recipe and just freeze half of it. It warms up great. This is great with cornbread, by the way. If you're not as worried about low fat, you can add a half to one cup of whipping cream about twenty minutes before serving, omitting the sour cream. And since you've just added whipping cream, you might as well put some sharp cheddar in there, too.
