What Are The Ingredients For McCoubs Low Fat White Chicken Chili Recipe?The ingredients for McCoubs Low Fat White Chicken Chili are: Cheese cloth4 cans of navy beans 1 can stewed tomatoes 4 boneless, skinless chicken breasts 1 of each green, red, and yellow pepper diced 1 large onion, diced 4 cloves garlic, minced 1/2 cup of celery (reserve the celery leaves) 1/2 cup of chopped carrots 2 large cans of fat free chicken broth Seasonings to taste: black pepper salt Louisiana Hot Sauce Bay leaf Rosemary Parsley Garnish (optional): fat free sour cream, fat free cheddar cheese, sliced green onions How Do I Make McCoubs Low Fat White Chicken Chili?Here is how you make McCoubs Low Fat White Chicken Chili: Take a large soup pot and simmer chicken breast for about 15-20 minutes or until done, in 1 cup of chicken broth and the seasonings you prefer. Once done, remove chicken from liquid and cut into cubes, set aside. To the remaining liquid in the soup pot, add the garlic, onions, and peppers. Simmer for about 10-15 minutes and add more chicken broth if needed. Cook until translucent, not mushy. Take 2 cans of navy beans and place cheese cloth over each can. Drain the liquid from the cans into the soup pot. Then take the beans from the can and wrap them in cheese cloth. Tie off the cheese cloth so the beans are wrapped almost like a hershey's kiss. Put them in soup pot. Pour the other two cans of navy beans into the soup pot. (with their liquid). Add carrots, celery, tomatoes, cubed chicken, and remainder of seasonings to a boil. Reduce heat, and simmer for about 20 minutes. Stir if needed. Remove the two cans of beans that were wrapped in cheese cloth and empty in a bowl or dish with sides. Mash the beans with a fork then return to the pot and simmer for about 15 more minutes. Continue to stir and add more seasoning if desired. This recipe makes a lot so you can set aside several containers and freeze them for future use. Garnish the chili with fat free sour cream, fat free cheddar cheese, and sliced green onions.
