Here is how you make Amy's low carb white chicken chilli:

Boil chicken with about 8 cups of water, 4 Tbsp of the butter, and some salt. When chicken is done, melt the other 2 Tbsp. Of butter in skillet add in cumin, oregano, and garlic. Let cook for 1 minute then add in onions and bell pepper. Cook till tender then add in green chillies. Microwave cream cheese for 1 minute or until soft, add to skillet mixture and mix well letting cream cheese finishing melting. Remove chicken from broth, but let broth continue to bubble. Melt coconut oil in small cup in microwave till melted the stir in xantham him. Take out a cup of the broth and whisk in the coconut oil and xantham gum mixture well. When nice and smooth add to pan of broth. Add ingredients from skillet to broth mixture and stir well. When everything is well combined, add 1/2 cup of heavy cream. Then shred chicken and add. Salt and Pepper to taste and you can add a hint of red pepper for a kick. I let mine cook for about 20 minutes on low. It freezes great, and is so yummy.
