1 cup Carrots, peeled and diced (or you can use canned and just dice them)
1 Tbsp. Olive Oil
1 Med. Onion
1/2 cup Original Flavor Coffee Mate Non-Dairy Creamer
1 tsp. Thyme, dried
1 Tbsp. Parsley, dried
Salt and Pepper to taste
Hot sauce to taste

Here is how you make Grandma Mac's Chicken Corn Chowder:

Combine potatoes, chicken cubes(raw) and broth in large pot. Bring to a boil, reduce heat to medium and cook until potatoes and chicken are done; approx. 15 min.While chicken is cooking, saute onion in olive oil.Remove about 2/3 of chicken and potatoes with strainer and place in a bowl. With hand held mixer or stand mixer, mix until potatoes are broken up and chicken is shredded.Add to sauted onion to chicken mixture along with corn, carrots, Coffee Mate, thyme, parsley, salt and pepper and hot sauce.Allow to simmer for 30 minutes.
