In a large pan, cover the chicken with plenty of water and simmer for 1-2 hours with seasonings to taste. Reserve resulting broth and remove bone and skin from chicken and chop into bite-sized pieces.Heat oil in large pot and add flour. Cook over low heat, stirring constantly, until the mixture is medium brown but not burnt. Slowly add back 6 C of the broth, whisking vigorously to incorporate with roux.
