I was trying to make a mock "Chicken & Stars" soup sans noodles. I decided to add quinoa as a substitute, and threw some kale in there to beef it up. Delicious and full of good nutrients whilst tasting just like chicken noodle!

Chicken breast, or leftover chicken, shredded
1c quinoa, any color
2c carrots, diced
2c celery, diced
3c kale, stems removed and shredded
1c green beans or other leftover vegetable from last night's dinner
6c or so chicken broth or stock; I used water + buillon this time and it was just as good
2 tbsp olive or canola oil
seasonings to taste

Here is how you make Chicken and Quinoa Soup:

Sautee carrots and celery in oil until tender. Throw in additional vegetables - I use whatever's left over in the fridge. Add a cup of broth and begin to layer the kale in. Keep adding as it shrinks. Throw chicken on top; add rest of broth. Simmer until heated through (or until chicken is cooked, if using fresh chicken).
