When warm: saute onion, carrots, potatotes, leek until almost done. Add chicken and cook for 2-3 minutes: to cook outside of chicken and hold in juice. Add kale, tomatoes, garbanzo (chickpeas) and cover: let the kale wilt some. Add broth, water, garlic (to taste), and bay leaves. Bring to boil. Reduce heat and simmer for 1-1.5 hours or until chicken is cooked and potatoes are soft. Add parsley, thyme, salt and pepper to taste. Let simmer for 5 more minutes. Remove from heat and let sit for 10 minutes before serving.
