2 T extra light olive oil
1 large onion: chopped
2 medium carrots: chopped
5 sm-m potatoes: cubed
1/2 leek: chopped
2 c Kale: rip the leaves off the stem and tear to pieces
2-4c. (1 quart) stewed tomatoes: I use home canned with no added salt
3 c (2 cans) garbanzo bean (chickpeas)
4-5 md. chicken breasts (no skin) (Optional)
4 c. chicken broth (can substitue veggie broth)
4-6 c. water
2 bay leaves
Parsley
Basil
Thyme
Salt
Pepper
Garlic


How Do I Make Chicken Optional Vegetable Soup?

Here is how you make Chicken Optional Vegetable Soup:

Heat oil in large stockpot or soup pan. When warm: saute onion, carrots, potatotes, leek until almost done. Add chicken and cook for 2-3 minutes: to cook outside of chicken and hold in juice. Add kale, tomatoes, garbanzo (chickpeas) and cover: let the kale wilt some. Add broth, water, garlic (to taste), and bay leaves. Bring to boil. Reduce heat and simmer for 1-1.5 hours or until chicken is cooked and potatoes are soft. Add parsley, thyme, salt and pepper to taste. Let simmer for 5 more minutes.
