1 large onion, half chopped, half finely diced
3 cloves garlic, minced
8 cups chicken stock (Kitchen Basics preferred)
6 tablespoons all purpose flour
1 cup heavy cream
1 box potato gnocchi (Delallo used)
3 cups fresh spinach leaves, coarsely chopped
2 large sprigs of fresh thyme
salt and pepper to taste

Here is how you make Cream of Chicken Soup with Gnocchi and Vegetables:

Bring chicken stock to a boil in a large pot. Add carrots, parsnips, celery, chopped onion, and fresh thyme. Simmer about 10 minutes until the vegetables are crisp tender. Turn off heat.Meanwhile, melt butter in another saucepan. Add finely diced onion and cook a few minutes until softened. Add garlic and stir until fragrant, about 30 seconds. Add flour and whisk for at least 2 minutes to eliminate the flour taste. Add the milk and cream, whisking constantly until thickened. Add to the stock and vegetables and season to taste with salt and pepper.Bring soup to hard simmer and add the gnocchi. Cook another 4 to 6 minutes or until gnocchi float to the top and vegetables are tender. Add the spinach leaves and stir. Turn heat to low simmer and partially cover pan.
