Step 1Remove the skin from the legs and thighs.Place in 2 cups of water and boil 20 minutes.Remove chicken from water and allow both to cool completely.Using a spoon, skim off any fat in the water, then dump water into a oven safe pan.Chop up chicken, and add to water in pan.(This is the "broth", i used campbell's because there's no homemade broth that works, so i'm sure exact sodium levels are wrong. My Plain Chicken Broth recipe is much lower and that is what i used.)Step 2Cut up potatoes, carrots and onions and add to chicken and broth.Add 2 more cups of water.Cover and place in oven at 350 F, for 1 hour.(Or slow cooker for 6-8 hours)Serving Size: makes 6-8 servingsNumber of Servings: 6Recipe submitted by SparkPeople user GEMGLOW.
