1 med- large yellow onion, diced
8-10 cups of chicken broth
1 serrano pepper ( seeded to taste )& minced
an entire head of garlic 10-12 remove skin, put in whole
one package of chicken sausage ( I prefer the chicken apple kind )
16 oz of baby spinach ( cut off stems if needed )

Here is how you make Spinach Chicken Sausage Soup:

First brown the sausage, slice, set aside.Next brown the onions in good sized soup pan, then add the beans & tomatoes- make sure they are drained well! Then add the chicken broth, garlic, serrano pepper & chicken sausage. Simmer for 30-60 minutes. Right before serving add spinach and cover.
