1 - 14 oz can COCONUT MILK, unsweetened
1 T - OLIVE OIL
1 T - Thai GREEN CURRY PASTE
1 T - fresh shredded GINGER ROOT
2 T - fresh chopped LEMON GRASS (or 1 T - dry)
3 C - thinly sliced fresh MUSHROOMS
4 oz - GREEN ONION (~8 thin), chopped w/ white and green portions in two separate piles
1 - large RED PEPPER, matchstick size slices
4 C - CHICKEN BROTH, organic, free range
3 C - WATER saved from parboiling chicken
1 C - snipped fresh CILANTRO (~half bunch)
2 T - LIME JUICE (or juice of 1 fresh LIME)
1 t - SALT

Here is how you make Thai Coconut Chicken Soup :):

Trim and cut the breasts lengthwise into two or three long sections each. Parboil them in about a quart of water just until the pink is nearly gone from the centers. Drain the liquid and save. Cool the chicken and shred with a fork or slice into bite size strips. Let the chicken rest in a bowl of warmed coconut milk. In a stock pot or very deep covered saut? pan on medium heat, add the oil and the first three seasonings. Quickly add the mushrooms, give it all a good stir and cover for a few minutes until the mushrooms begin to soften. Add the white portions of the onions and the red pepper and cover again for another few minutes till everything is nicely sweated. Add the chicken-coconut mixture, the broth and the saved water. Bring this all to a quick boil then down to a simmer. Add the green part of the onion portions and the cilantro. Simmer gently for a few more minutes while you tweak the flavoring to your taste with the lime juice and salt.Serving Size:?Makes 8 pint servings
