Here is how you make Vegetable Soup with chicken and orzo:

1. Chop the celery, onions, carrots, and squash, and put them in a crock pot.2. Add the tomatoes, broth, and water, and season as desired.3. Place the chicken breast in the crock pot so it is submerged in the liquid. Put the lid on, and set the crock pot to LOW.4. Cook for about 6 hours. Pull out the chicken breast, chop or shred, and put the meat back in the pot. Add the orzo, corn, and peas, and cook for another 30 minutes or until the pasta is done. Check the seasoning and serve.Makes about 15 1-cup servings.You can also make this on the stovetop. Just sautee the veggies in a giant skillet before adding to a large stock pot with the tomatoes, broth, and water. Pre-cook the chicken (or use a rotisserie breast from the grocery store) and chop or shred before adding to the pot. Bring to a simmer and cook about an hour. Throw in the frozen veggies and pasta, and cook about another 1/2 hour or until pasta is done.This makes a BOATLOAD of soup--plenty to eat on for the week with some to freeze for another time. I've also made this with alphabet pasta, which is kind of fun! You can add more chicken, of course--just re-calculate the calories.
