1 tsp canola oil
1 medium onion, diced
2-3 cloves garlic, minced
3 cans tomatoes, your choice of variety. I use 1 can w/ green chilis, 1 Italian style, and 1 chili ready or just diced tomatoes.
3 cans beans, drained and rinsed. I use a variety including pinto, kidney and black. Sometimes northern.
1 can corn, drained
1/4 cup water
1 Tbsp cornstarch
1-2 tsp Cumin
1-3 tsp chili powder
3/4 cup shredded cheddar cheese

Here is how you make Quick and Easy Chili w/ Beans and Corn:

makes 6 servings, about 2 cups eachHeat oil in 4 quart pan. Add onions and saute 3-4 min. Add garlic and meat, saute 1 min. Add tomatoes (undrained), beans (drained) and corn. Heat to a low boil. Meanwhile, in a small bowl or measuring cup, combine the water, cornstarch, cumin and chili powder. After the chili has come to a boil, add, stirring constantly. Liquid will thicken. Reduce heat and continue to simmer. If you are in a hurry, you can serve and eat now, but it's better if allowed to continue to cook for awhile.
