Green chili peppers, fresh 1 cup or to taste
Sea Salt optional
Coconut Oil 1 tsp
Beef Broth, low sodium or Organic preferably, 1 box

Here is how you make Paleo Santa Fe Green Chili Stew:

*Prep: Drain tomatoes in strainerChop Green chiliAdd Beef broth, chili and tomatoes to a small sauce panBegin: Start a large pot with boiling water. Cut cauliflower florets and place into boiling water to steam cook for 10-15 minutes or until soft. Drain and place in food processor until almost liquid-like. Season lightly with sea salt. Cook stew meat through in large pot. Add coconut oil if there is not enough natural from the meat. Add pureed cauliflower from food processor to the meat to make a faux roux to make the stew thicken.Mix continuously on med to high heat until color has turned light brown.Once the color is just right, add broth, tomato and chili mixture from sauce pan to the meat and cauliflower. Continue to cook on med-high heat until boiling. Add more beef broth if stew is too thick. Add garlic.Simmer for approx. 10 more minutes.
