What Are The Ingredients For Veggie-Full Meat Lovers' Chili Recipe?The ingredients for Veggie-Full Meat Lovers' Chili are: 2 red bell peppers, seeded2 green bell peppers, seeded 1 - 2 jalapeno peppers, seeded (Jalapeno seeds may be discarded OR reserved and added to the chili with the other spices for a VERY hot chili!) 1 Tbsp olive oil 4 cups beets, scrubbed & chopped 4 cups carrots, scrubbed & chopped 2 cups onion, chopped 1 cup celery, chopped 2 tsp"Better Than Bouillon" stock concentrate 3 cloves garlic, crushed 4 Tbsp chili powder 1 Tbsp ground cumin 2 tsp curry powder (hot, sweet, smoked - choose your favorite!) 8 oz lean ground beef 16 oz lean ground turkey 28 oz can diced tomatoes 15 oz can sweet corn How Do I Make Veggie-Full Meat Lovers' Chili?Here is how you make Veggie-Full Meat Lovers' Chili: Roasted Peppers: Seed and halve peppers. Flatten, skin side UP, on a baking sheet. Broil for 8 - 10 minutes, or until skins are almost completely blackened. The peppers will sizzle & pop but don't worry, this technique REALLY develops the flavor. Remove peppers from the oven, and slide into a paper bag, or invert another pan over them. This will allow the steam to loosen the blackened skins. After 5 - 10 minutes of steaming, remove and discard the blackened skins. Chop peppers and set aside. The Chili:Chop beets, carrots, onions & celery so that they are uniform in size. When cooking for the guys, I chop veggies a little smaller so they're harder to identify! Saute veggies over medium heat, in oil and "Better Than Bouillon" concentrate. Add small amounts of water to de-glaze the pan as needed. Veggies are ready when they are uniformly tender. The more you cook them, the less they will be noticed! Add crushed garlic, chili powder, cumin, and curry powder, and saute, stirring constantly for 1 minute. The mixture will become quite dry, but resist the urge to add liquid unless the spices begin to burn & smoke. Move vegetables to the outer edges of the pan. gently break ground beef and turkey into large pieces and drop into the center of the hot pan. Brown over medium-high heat, stirring infrequently, so as to keep the meat in large chunks. When meat is browned, stir in diced tomatoes, corn and roasted peppers. Add water, as needed, to achieve desired amount of broth. Chili may be eaten immediately, but the longer it "stews," the better the flavor. Serve with crushed corn chips, corn bread, shredded cheese, sour cream, cilantro...anything you like!
