Here is how you make Clam Chowder, New England Style, Patti's:

The fresh clam juice and fresh shucked clams come from one 51 oz can of Seawatch brand, chopped sea clams, from Costco. Separate the juice from the clams and set aside in the refrigerator.In a large 8 qt stock pot, put in the bacon grease, onions, carrots, celery, potatoes, thyme, black pepper and cook for 20 minutes, stirring occasionally. Pour in the clam juice and simmer for 20 minutes, stirring occasionally. Meantime in a separate small pot, cook the melted butter and flour, stirring constantly with a whisk, for three minutes. To this rue, slowly add a cup of the hot broth from the large stock pot. Pour this rue into the large stock pot, and simmer for a few minutes until the broth thickens. Finally, add in the clams and milk. Stir for a few minutes on medium heat to warm the mixture up and cook the clams a bit. Turn off the heat and set aside to cool. When cool enough, place in the refrigerator to chill - minimum four hours to overnight if suitable. This allows the ingredients to "marry".
