Here is how you make Moosiemate's Cascadian Clam Chowder:

Separate chopped canned clams from the juice. Add additional clam juice to bring the quantity to 4 cups.Prepare for the final cooking stage by blending together all spices. Set the spice blend aside for use later.Prepare onions, carrots and leeks, then saute' onions, carrots and leeks over medium heat until translucent. Add the clam juice to the sauteed vegetables and increase heat to medium-high. Stirring constantly, slowly add in the flower. Whisk constantly until flour is well blended. Then, reduce heat and add clams.Allow to simmer for 10 minutes or so. While the mixture is simmering, dice the two potatoes and boil them. The boiling time will be approximately 7 to 10 minutes. Do not overcook the potatoes or allow them to become too soft. Drain the water from the potatoes after they are cooked.After the clam mixture has simmered as described, add the spice blend, gently stirring as your add. Then, add the potatoes while continuing to gently stir.Lower the heat and allow the chowder to simmer for about 15 minutes (on low heat).
