4 Tablespoons unsalted butter
(I save more calories by spraying the pan with non-stick spray and saute the vegetables with that)
1 cup chopped onions
1 cup chopped celery
1/2 cup chopped parsley
6 cups chopped clams
(I use frozen ones in water but canned can be substitued if you can't find them)
6 cups water
4 bottles clam juice
8 cups peeled and diced potatoes
1 cup tomato sauce
1/2 teaspoon cayenne pepper
Salt and freshl ground black pepper to taste


How Do I Make Red Clam Chowder?

Here is how you make Red Clam Chowder:

In a large soup pot, melt the butter. Add the onions and celery and cook over medium heat for 5 minutes or until softened. Add the clams (and their liquid if using canned clams), the clam juice and the water. Bring to a boil, reduce the heat to medium low and simmer covered for 30 minutes. Add the potatoes. Bring to a boil and reduce the heat. Simmer until the potatoes are soft, about 15 minutes. Stir in the tomato sauce and cayenne pepper. Simmer for 10 additional minutes. Add parsley and stir.
