2 tbsp. real bacon bits
1 cup chopped onion
1 cup diced celery
2 tbsp. flour
4 cups low sodium chicken stock
1.5 cups diced potatoes
1.5 cups diced carrots
1/4 tsp. pepper
1 cup skim milk
Optional:
1/4 tsp dried rosemary and or 1/4 tsp thyme

Here is how you make Potatoe Chowder:

In large saucepan on medium combine celery, onion and bacon in 1 tbsp. olive oil or spray. Cook for 5-10 minutes until onion is softened stirring often. Sprinkle with flour, heat and stir 1 minute.Slowly add 1 cup stock. Heat and stir until boiling and thickened. Add remaining stock, stir, bring to boil.Add next 5 ingredients. Stir. Reduce heat to medium low. Simmer for 15-20 minutes, stirring occasionally, until potatoe is tender. Add milk. Heat and stir for 1-2 minutes until heated through. Puree in pot if desired.
