This is a meal deal that I created while in university ... the veggies used are what I could get for reasonable cost at a local farmers market, but in general any veggie even fruit is acceptable (aka made with a low low low budget in mind), Beef is used in this one because it was on sale, but ground turkey, chicken even buffalo is suitable, each meat will change the flavor of the dish. 1) Put Tomato Sauce into crock-pot and put crock-pot on low to start 2) Microwave meat till cooked, or cook it in a non-stick fry pan without any oils or butter till cooked though.3) Chop each of the veggies to your personal taste (minced or diced), add each veggie as its chopped and mix well into the sauce (coating well)4) mince garlic and any other herbs being addedTurn Crock-Pot to High, and make sure mixture is well mixed, place lid on and for the next hour keep at high, after that you can put it to low. This can take upwards of 12 hours to cook or as little as two hours (if less keep on higher heat longer then an hour)NOTES: A serving is 8 oz (a child's or old style soup bowl) if used as a meal by itself, if used as a sauce for pasta a serving is 4 oz (this recipe is set for it being a meal all by itself) or less depending on how much sauce you like with your pasta.A nice thing to serve this with is Tacos or Nachos , but any hard bread will go with it as well (garlic bread goes nicely with a little cheese)This meal falls within the Canadian recommended serving of sodium for a single meal of under 500 mgSERVING SIZE: 8 ozSERVINGS: 10Number of Servings: 10Recipe submitted by SparkPeople user NYXWOLFWALKER.
