12 hard boiled eggs
3 tbsp mayonnaise (Duke's is best)
1 tbsp cider vinegar
Dash of salt


How Do I Make Deviled Eggs?

Here is how you make Deviled Eggs:

Place the eggs in a pot and cover with cold water. Bring to a boil and cook until hard boiled. (use an egg timer for best results). Drain and place immediately in an ice bath. This will cool the eggs quickly for handling, but more importantly, it will make sure that green ring on the outside of the yolk never appears. Peel the eggs and cut in half lengthwise. Pop out each yolk half into a separate bowl. Place the empty whites on an egg tray. When all the yolks have been harvested, mash them up with a fork and add the vinegar, a little bit at a time. You may not need the whole tbsp. Add the mayo and mix thoroughly to a smooth consistency. You may not need all of the mayo either or you may need a little more. It depends on how big the yolks in your eggs are. You don't want the mixture to be too runny. It should be about the consistency of frosting or icing. I put mine in a piping bag and fill the eggs, but you can spoon the mixture right into the egg halves. Store in the fridge.
