Old Bay seasoning 1 1/2 t sea salt (regular salt is alright) Cracked black pepper (3 turns of the mill) How Do I Make New England-Style Fish/Clam Chowder?Here is how you make New England-Style Fish/Clam Chowder: Heat a large soup pot over medium to med-high heat. Then add oil & onion and cook till onion is translucent. While waiting for the onions to cook, steam the butternut squash in the microwave in a covered microwave-safe dish & a little bit of chicken broth (2-4 T.) approx. 1-2 mins till tender when pierced with a fork (timing depends on your microwave); set aside. Back to the soup pot. Add the potatoes & 2 c. chicken broth. Cook potatoes till tender when pierced with a fork, stirring occasionally (approx. 8 mins). When potatoes are tender, take out approx. 1/2c.-1c. of potatoes (may use more or less depending on how thick you like your chowder), & put in a blender or food processor with the remaining 1/4c. chicken broth & the steamed butternut squash & broth; blend till very smooth (you're making a moderate to thick slurry/rue); stir into to soup. Next, add the milk, bacon, cod, & seasonings. SIMMER soup until cod is cooked through - DO NOT boil.
