Heat a large soup pot over medium to med-high heat. Then add oil & onion and cook till onion is translucent. While waiting for the onions to cook, steam the butternut squash in the microwave in a covered microwave-safe dish & a little bit of chicken broth (2-4 T.) approx. 1-2 mins till tender when pierced with a fork (timing depends on your microwave); set aside. Back to the soup pot. Add the potatoes & 2 c. chicken broth. Cook potatoes till tender when pierced with a fork, stirring occasionally (approx. 8 mins). Next, add the milk, bacon, cod, & seasonings. SIMMER soup until cod is cooked through - DO NOT boil.
