Whisk together 1 min. Add swiss and cheddar cheese. set aside. Bring a large oven safe pan sprayed with non-stick spray to med heat on the stove. Add bacon and mushrooms and cook until bacon is slightly crispy and mushrooms begin to soften, about 3-5 minutes. add apple and continue to cook until apple softens, about 2 minutes. Pour egg mixture into pan and make sure mixture is distributed. Cook for two minutes and remove from heat. Sprinkle parmesan cheese evenly on top. Place under broiler. Cook 4 minutes until egg has puffed and mixture has set. Allow to cool.
