~ Mince garlic and onion, grate cheese. Run the hot water when done with the cheese. (for cheesy herb bread add 1 tsp each of dried rosemary, thyme and dill crush in a pastel and mortar) ~ In a large bowl mix 2 cups of flour, sugar and undissolved yeast. Add butter. ~ Gradually add very hot tap water and beat 2 minutes on medium speed scraping the bowl occasionally. Add 1cup of flour to make a thick batter. Beat at high speed 2 more minutes. ~ Stir in cheese, onion, garlic (and dried herbs) and 1 cup?ish flour, enough to make a soft dough. Turn out onto a lightly floured board; knead until smooth elastic; adding flour to the surface when needed, 8 minutes. Place in a greased bowl, turning to grease the top. Then place in an oven with only its light turned on cover and let rise until double in bulk, about an hour.~ Punch down and turn onto the counter. Divide into 20 pieces and form into a log shape, place 2 inches apart onto a greased baking sheet, press down lightly. Repeat until all dough is used. Cover and let rise in the oven again until doubled in bulk about 45 minutes. ~ Preheat oven to 400 F. Bake about 15 minutes.
