What Are The Ingredients For Lysa's Gazpacho Recipe?The ingredients for Lysa's Gazpacho are: 4 1/2 cups chopped tomatoes (3pks crushed tomatoes in the paper cartons)2 medium-sized cucumbers, peeled and diced small 1 rib of celery, diced small 3 carrots, chopped small (I used a bunch of the carroteenies chopped til it looked like about 3 big carrots) 1/2 medium-sized red bell pepper, chopped small 1 clove garlic, crushed 2 or 3 Tbsp lemon juice 1 Tbsp e.v. olive oil 1/4 tsp (or to taste) of ground black pepper 1/8 tsp red pepper flakes 1/8 tsp ground cayenne 1/8 tsp garlic salt 1/4 to 1/8 tsp chives 1/2 cup water @6 to 8 oz low-sodium vegetable juice (like V8) How Do I Make Lysa's Gazpacho?Here is how you make Lysa's Gazpacho: In blender or large food processor, puree carrots, celery, red bell, garlic, one of the cukes and a fourth of the other, lemon juice, spices, olive oil, water and tomatoes (ONLY if you're using fresh.) Pour into large bowl and stir in remaining diced cuke. If using crushed tomatoes instead of fresh, add them now and stir well. Add veg.juice as needed to make preferred consistency.
