My husband hates guacamole but he LOVES my guacamole! This is a very fresh tasting, light guacamole that is great served with your favorite chips, crackers, pita or even fresh veggies. It's also awesome in tacos or atop taco salad.

4 plum tomatoes
1 medium sweet onion
2-4 jalapeno peppers, deseeded and devained
Handfull of fresh cilantro
3 cloves garlic
Juice of 2 limes
1 tsp sea salt


How Do I Make Fresh and Healthy Guacamole?

Here is how you make Fresh and Healthy Guacamole:

Chop onion, tomato and jalapeno and stir together in a large bowl. Mince garlic and cilantro and add to vegetables. Tip for avocados - cut fruit in half, following knife along the pit. Twist apart. The pit will remain in one of the halves. Hold half with pit in the palm of one hand and carefully hit pit with your knife to lodge knife into pit. Slowly twist pit with knife and it will break free. Discard pit. Run knife through fruit (in the skin) in a grid pattern, slicing the fruit but not the skin. Repeat with other half, then scoop the flesh from the skin with a soup spoon. Fruit will come out of the skin already cubed. Add avocado cubes to remaining mixture and immediately squeeze lime juice over avocado (helps prevent browning and adds a fresh flavor) and sprinkle with sea salt. Gently fold everything together and serve immediately or store in the refridgerator until needed. If storing, cover with plastic wrap, making sure that the plastic wrap is smoothed directly on the dip so there is no air reaching the dip.
