2 tbsp of tahini (sesame seed paste - find in the "international" or "healthy" food aisle of the supermarket)
juice of 1 lemon (about 1/8 cup)
1/8 to 1/4 cup of olive oil
1 to 1.5 tbsp of ground cumin
1 to 1.5 tsp Kosher salt
black pepper to taste
crushed red pepper to taste (optional)

In a food processor on high, blend chickpeas, 1/4 c of reserved water, garlic, tahini, lemon juice, 1/8 cup olive oil, 1 tbsp of cumin and 1 tsp of salt until you have a lumpy paste. (It'll be kind of ugly, but I swear it'll taste good!) Check the taste and consistency, and if you like, add more water, olive oil, salt, pepper, and cumin. Continue to blend til you have your desired consistency. Serve garnished with paprika.
