If you don't, transfer the beans to a pot and cook on the stove (low for several hours, stirring occasionally and adding water if necessary. Cook until the beans are tender, but not mushy.Use a food processor to puree the beans and remaining ingredients (note: I have wrecked many a blender attempting to make hummus...use a food processor!) Retain the cooking water from the beans to add to the hummus as needed to make a creamy consistency. When it tastes pretty good, consider adding kalamata olives, green onions, roasted red pepper, fresh ground black pepper, or combinations of these things! Experiment by adding optional ingredients to one or two cups of the base.
