1 tbsp olive oil
8 garlic cloves, peeled and smashed
8 parsley branches
6 thyme sprigs
2 bay leaves

2 tbsp oilive oil
2 cups finely chopped onion
2 tbsp tomato paste
1/4 cup chopped parsley
4 garlic cloves
3 carrots, diced
1 cup diced celery
salt and freshly milled black pepper
1 cup french green lentils, sorted and rinsed
Aromatics: 2 bay leaves, 8 parsley branches, 6 thyme sprigs
Basic Vegetable Stock or 9 cups water
1 bunch greens
2 cups cooked small pasta
Paremesean cheese


How Do I Make Lentil Minestrone?

Here is how you make Lentil Minestrone:

To make stock, scrub the veggies and chop them into 1 inch chunks. Heat the oil in a soup pot. Add the veggies, garlic and herbs and cook over high heat for 5-10 minutes, stirring frequently. Add 2 tsp salt and 2 quarts water and bring to a boil. Lower heat and simmer, uncovered for 30 minutes. Strain.To make the soup:Heat the 2 tbsp oil in wide soup pot with the onions. Saute over high heat, stirring frequently until lightly browned, about 10 minutes. Add the tomato paste, parsley, garlic, vegetables and 2 tsp salt and cook 3 minutes more. Add the lentils, aromatics and stock (or water) and bring to a boil. Lower the heat and simmer, partially uncovered for 30 minutes. Taste and season. Remove the aromatics.Boil the greens in salted water until tender, and bright green, then chop them coarsely.
