Here is how you make Marinated Olives:

1. Soak olives in water for approx. 30 minutes to remove brine. Pat dry. Mix lemon zest, oregano, thyme, rosemary, and garlic with several Tbsp. olive oil. Add olives and coat. Leave for approx. 1-2 hours. 2. Pour olives and marinade into a sterilized storage jar. Add enough olive oil to cover the olives. Store in refrigerator for 1 week prior to serving.
