Here is how you make Mexican Ceviche:

Dice the fish into 1/4 - 1/2" chunks (the smaller the better). Combine with lime juice, enough to completely cover fish, and refrigerate for 3-4 hours, or overnight. Stir often. (This actually cooks the fish!)Once fish is done, combine all other ingredients in a separate bowl. Remove fish from lime juice marinade, discarding juice. Combine fish with fresh ingredients, mixing well.Can serve immediately, or let set in refrigerator to allow flavors to combine (1-2 hours is perfect).Serve in a dessert bowl or martini glass lined with lettuce leaves.
