I am a savory breakfast kinda person. I don't care for cereal, pancakes, or waffles. So I was pleasantly surprised by a recipe I saw on Girl Meets Farm with Molly Yeh. Heat a large nonstick skillet over medium heat and spray with cooking spray ( she used olive oil but for the sake of limited calories I will use cooking spray). Pour about 1/3 cup batter and cook until set on the bottom, about 2 minutes: you'll know its ready to flip when it lifts easily off of the skillet. Flip and cook until set on the other side, about another minute. Top with desired toppings. If topping with cheese it's best to put it on as soon as you flip so it melts a bit.
