1) In a large saucepan, heat oil over medium-high heat. Add onion, garlic, carrots, and celery. Cook, stirring frequently, about 5 minutes or until onion starts to soften.2) Stir in broth, tomatoes, beans with their liquid, oregano, ham, and salt. Add cheese rind to the pot. Bring to a boil, reduce heat and simmer about 20 minutes or until carrots are tender, stirring occasionally. Stir in macaroni, bring back to a boil and cook about 6 minutes. Stir in spinach and cook 2 minutes or until spinach is wilted.
